Golden, bubbling, and gloriously over the top, this dish is Christmas comfort at its best. It is the side that steals the show, the one everyone goes back for “just one more spoonful.” Pile it high, scrape the dish clean, and soak up the joy of food that brings everyone together. 600 g potatoes (non waxy), sliced as thinly as possible
300 g macaroni pasta
1 cup (250 ml) milk
185 ml thickened cream
250 ml chicken stock (or French onion soup mix)
50 g butter
1 tbsp olive oil
2 tbsp all purpose flour
1 tbsp honey or natural sweetener
2 cups (200 g) shredded cheddar cheese (divided)
1 cup (100 g) shredded parmesan or gruyere
3 onions, thinly sliced
35 g Mingle Potato Bake Seasoning
Panko crumbs
Chives, thinly sliced (or swap for Mingle Furikake for extra umami)
Directions
Preheat oven: Set to 180°C.
Caramelise your onions: In a pot, add butter, olive oil, honey and onions and cook on low until caramelised (about 50 minutes). Be careful not to burn, these should have a jammy texture.
Set aside: Place onions aside to be used as the top layer of your dish.
Make the liquid mix: Add together milk, cream, stock and Mingle’s Christmas Potato Bake Seasoning. Simmer for 2 minutes whilst stirring all ingredients together.
Assemble the bake: Add the uncooked macaroni into the base of your oven dish. Sprinkle over one third of the cheese. Add a layer of potatoes and another layer of cheddar cheese. Repeat until all potatoes are used.
Add liquids: Pour the liquid mix over the bake. Press down potatoes so they are just covered. Top evenly with caramelised onion and remaining cheese.
Bake until tender: Cover with foil and bake for 60 minutes, or until potatoes are fork tender.
Finish with crunch: Remove foil. Sprinkle with panko crumbs and chives (or Mingle Furikake). Bake for a further 20 minutes, until golden. For extra crisp, grill for the final 5 minutes.
Rest and serve: Let sit for 5 to 10 minutes before serving.
