150g diced chicken breast (or pre-cooked chicken)

150g cooked rice (or brown rice, or quinoa etc.)

1/2 cup diced capsicum

1/2 cup cherry tomatoes

1 cup spinach

20g feta cheese
-
1/4 packet Mingle Chipotle seasoning
Directions
Cook rice as per packet instructions (use instant rice if desired)
Season chicken with chipotle and grill. Add capsicum to the pan and cook until soft.
In a glass meal prep container, layer rice, chicken, capsicum, spinach and tomatoes.
Sprinkle with extra chipotle seasoning and top with crumbled feta.
