Ingredients
- 3 x corn cobs

1 tbsp melted butter

2 tbsp Mingle Chilli & Lime Seasoning

1/2 cup Greek yoghurt

1 tbsp mayonnaise

1/2 cup capsicum, diced

1/2 cup tomatoes, diced
-
1 bunch fresh parsley, finely chopped

1/2 block feta cheese, crumbled

Juice of 1 lime
Directions
- Prep the Corn: Mix Mingle’s Chilli & Lime Seasoning with melted butter and brush it over the corn cobs.
Cook the Corn: Place the seasoned corn in an air fryer and cook at 200°C for 15–20 minutes, or until lightly charred and golden.
Make the Salad: While the corn is cooking, combine the Greek yoghurt, mayonnaise, capsicum, tomatoes, parsley, feta, and lime juice in a large bowl. Add an extra sprinkle of Chilli & Lime Seasoning for extra flavour.
Assemble: Once the corn is cooked, cut the kernels off the cob and mix them into the salad.
Serve: Enjoy with tortillas or corn chips for a vibrant, zesty dish!
