Ingredients
- 48 potato gems (4 per muffin cup)

2 tbsp oil

1 onion, diced

500g beef mince, chicken mince, or lentils

2 tbsp tomato paste

1 packet Mingle’s Chilli Con Carne Recipe Base

400g tin black beans, drained

250mL beef stock

400g tin tomatoes

1 cup grated cheese (cheddar or your favourite)

Spring onions, finely sliced

Directions
Prep the Potato Cups:
- Preheat your oven to 180°C (356°F).
Lightly spray a 12-hole muffin tray with non-stick cooking spray.
Place 4 potato gems into each muffin cup.
Bake for 10 minutes until the gems are soft but not fully cooked.
Remove from the oven and carefully smash the gems into a flat base using a rolling pin. This creates the “cup.”
Make the Chilli Con Carne:
- Heat 2 tbsp oil in a large pot over medium heat.
Add the diced onion and sauté until translucent.
Add the protein of your choice (beef mince, chicken mince, or lentils) and cook until browned.
Stir in 2 tbsp tomato paste and Mingle’s Chilli Con Carne Recipe Base, cooking for 1-2 minutes.
Add the drained black beans, beef stock, and tinned tomatoes. Stir well.
Reduce the heat and simmer uncovered for 25 minutes, stirring occasionally.
Remove from heat, cover, and let sit for 10 minutes to enhance the flavours.
Assemble and Bake:
- Spoon 1 tbsp of the Chilli Con Carne mixture into each smashed potato cup.
Sprinkle a generous amount of grated cheese on top.
Return the tray to the oven and bake for 5-10 minutes, or until the cheese is golden and bubbly.
Garnish and Serve
Remove the potato cups from the oven and let them cool slightly.
Add a dollop of sour cream on top of each cup.
Sprinkle with sliced spring onions for a fresh finish.
