250g low carb potatoes

150g diced chicken breast (or roast chicken)

50ml Mingle BBQ sauce

30g shredded mozzarella cheese

1/4 packet Mingle American BBQ seasoning

Light spray olive oil
Directions
Preheat the oven to 180°C or prepare an air fryer.
Season chicken with half BBQ seasoning and grill or use pre-cooked chicken.
Dice and season potatoes with oil and remaining seasoning. Cook until golden (20–25 mins).
Place potatoes in an oven-safe dish, top with chicken, BBQ sauce, and cheese.
Bake again 5–10 mins until the cheese melts. Add extra BBQ sauce if desired.
