Ingredients: Chicken juice (from the rotisserie chicken); 1 packet rice (cooked according to packet instructions); 1/2 rotisserie chicken, shredded; 1/2 tin black beans; 1/2 tin corn; 10 cherry tomatoes, chopped; 1/4 red onion, finely diced; Jalapeños, to taste; Mingle Taco Seasoning (use 1/2 a packet); A big squeeze of lime; Big handful of shredded cheese; 1 big tablespoon sour cream; Guacamole (avocado + Mingle Guac Seasoning); Handful of crushed corn chips

This viral rotisserie chicken hack we’ve been seeing everywhere, but we thought we’d do it with a TACO TWIST! 🌮

Ingredients

Chicken juice (from the rotisserie chicken)
1 packet rice (cooked according to packet instructions)
1/2 rotisserie chicken, shredded
1/2 tin black beans
1/2 tin corn
10 cherry tomatoes, chopped
1/4 red onion, finely diced
Jalapeños, to taste
Mingle Taco Seasoning (use 1/2 a packet)
A big squeeze of lime
Big handful of shredded cheese
1 big tablespoon sour cream
Guacamole (avocado + Mingle Guac Seasoning)
Handful of crushed corn chips

Directions

Take the hot rotisserie chicken out of the bag and shred it, keeping all the chicken juice in the bag.
Cook the rice according to packet instructions, then add the cooked rice straight into the rotisserie chicken bag, followed by the shredded chicken.
Add the beans, corn, cherry tomatoes, red onion and jalapeños.
Sprinkle over 1/2 a packet of Mingle Taco Seasoning, add the sour cream, shredded cheese and a big squeeze of lime, then shake everything together until well combined.
Finish with guacamole and a crunchy handful of crushed corn chips.
