Ingredients
-
3 truss tomatoes, halved
-
1 carrot, super finely diced
-
1 brown onion, super finely diced
-
2 large celery stalks, super finely diced
-
500g lean beef mince
-
250g lean pork mince
-
150g mushrooms, finely diced
-
1 packet Mingle Seasoning Spag Bol recipe base
-
½ cup beef stock
-
600g tomato passata
-
1 cup mozzarella, grated
-
1 cup tasty cheese, grated
-
¼ cup parmesan, finely grated
-
Fresh parsley
-
Chilli flakes
Directions
Heat a drizzle of olive oil in a pan and place the halved truss tomatoes cut-side down. Add the finely diced carrot, brown onion, and celery stalks, and sauté for 10 minutes, or until softened; then use a fork to peel away and discard the tomato skins.
Add the lean beef mince and lean pork mince to the pan, cooking until browned and breaking it up with a wooden spoon.
Stir in the finely diced mushrooms, the packet of Mingle Seasoning Spag Bol recipe base, beef stock, and tomato passata. Simmer until the sauce thickens and the flavors meld together. Roughly 15-20 minutes.
Toss your cooked pasta of choice directly into the rich meat sauce until completely coated.
Transfer the pasta to a baking dish or oven-safe bowl, then layer the top generously with grated mozzarella, tasty cheese, and finely grated parmesan.
Place in the air fryer or oven until the cheese is thoroughly melted, bubbling, and golden brown. Garnish with fresh parsley and a pinch of chilli flakes before serving.
