Ingredients

1 medium sweet potato
For the Buffalo Chicken:

120g cooked shredded chicken (about 1⁄2 large chicken breast)

1 tbsp cream cheese
-
1 tbsp Greek yogurt

1–2 tsp Mingle Buffalo Seasoning (to taste)
To Top:

1⁄4 cup shredded cheese (mozzarella or cheddar work well)

Green onion
Directions
Preheat your oven to 180c fan. Poke holes in your sweet potato with a fork and bake in oven for 60-90 minutes or until soft. (For a speedy option, you can microwave your potato first for 6-8 minutes, then bake until soft)
In a bowl, add your shredded chicken, cream cheese and Mingle Buffalo Seasoning, then mix until creamy and coated.
Stir through the Greek yoghurt to lighten it up (add a tiny splash of water if needed to loosen.
Once cooked, remove potatoes from oven and cut in half. Spoon the buffalo chicken mixture onto the sweet potato.
Top with shredded cheese, then grill/broil for 2-4 minutes until melted and bubbling.
Finish and serve with spring onion (and an extra pinch of seasoning if you like).
