Ingredients

Mini tortilla wraps

1 whole capsicum or variety parts of red, green and yellow capsicum

Mingle’s Taco Mexican Fiesta Recipe Base

Extra virgin olive oil, for sautéing

1-2 avocados
-
Squeeze of lime
-
1 tbsp Mingle’s Avo & Guac Topper Seasoning
-
2 tbsp unsweetened coconut yoghurt
-
Pickled onions
-
Fresh coriander
-
Salt, to taste

Directions
Preparing the Filling
Heat a splash of extra virgin olive oil in a pan.
Slice the capsicum and sauté until soft.
Add Mingle’s Taco Mexican Fiesta Recipe Base to the pan and stir well to coat the capsicum.
Assembling the Tacos
Warm up your mini tortilla wraps - a microwave or quick stint in a dry hot pan should do the trick!
Slice the avocado and give it a good squeeze of lime and a sprinkle of Mingle’s Avo & Guac Topper Seasoning to keep it fresh and zingy.
Layer your warmed tortillas with the seasoned capsicum, avocado slices, a dollop of coconut yoghurt, pickled onions, a sprinkle of fresh coriander, and salt to taste.
