Ingredients

125g beef mince
-
1 tsp Mingle Seasoning Meat All Rounder

1 Tbsp Olive oil
-
¼ red capsicum
-
¼ red onion
-
1 slice Colby cheese
Chimichurri sauce:
-
1/4 long red chilli, finely sliced
-
1 ½ tbsp parsley, finely chopped
-
1 tbsp olive oil
-
1 tsp vinegar
Directions
Shape your beef mince into a triangular patty. Add olive oil to a frying pan over high heat, and cook the patty for about 3 minutes per side or until a Maillard reaction has formed.
Sauté the capsicum and red onion on a low heat until softened.
Mix the chimichurri ingredients together until well combined.
Slice the tortilla from the bottom center to the midpoint.
Place ingredients in these quadrants:
• Bottom Left: Chimichurri
• Top Left: Beef patty
• Top Right: Capsicum and onion
• Bottom Right: Cheese
Fold the chimichurri (bottom-left) up, then right over the slaw, then down over the cheese to form a triangle.
Heat in a dry pan or sandwich press for 1–2 minutes per side until the wrap is crispy and the cheese has melted.
