150g diced chicken breast

1 packet dried instant noodles

30g diced brown onion

1/2 cup diced red capsicum

Handful of chopped pak choy

20ml coconut milk

250ml chicken stock

1/2 packet Mingle Chow Mein recipe base seasoning
Directions
Preheat the oven to 180°C.
In a glass meal prep bowl, add chicken, onion, capsicum, pak choy, coconut milk, chicken stock, and seasoning. Mix well.
Bake in the oven for 25–30 minutes until the chicken is cooked.
Remove and add instant noodles to the liquid, ensuring they are covered.
Cover with lid and let sit for 2 minutes to soften the noodles.
Enjoy or store for meal prep.
