American BBQ Slow Cooker Pulled Brisket or Pork

Ingredients
- 1.3 kg beef brisket or pork shoulder
- 2 large onion, thinly sliced
- 3 tbsp olive oil
- 300ml of beef stock
- ½ cup of Mingle (or your favourite) BBQ sauce
- 1 tin of tomatoes
- 2 tbsp honey or your favourite natural sweetener
- 1 sachet Mingle American BBQ Spice Rub
Directions
Heat olive oil in a large frying pan over high heat. Brown brisket/pork on all sides. Transfer to slow cooker.
- Add remaining ingredients to slow cooker. Cover and cook for 8 hours on low.
- Take brisket/pork out of slow cooker & shred with two forks. Return shredded beef to the slow cooker, mix through juices and cook for 1 more hour on low or high if you want to reduce the sauce
- Serve hot in bread rolls or tacos with slaw. A good alternative is on top of rice or with mashed potatoes

Tips:
- Freeze: Pulled brisket freezes well for up to 3 months.
- Batch Cook: Double the recipe for entertaining.
