Ingredients

Mingle Satay Recipe Base

500g of lean & diced chicken, beef, pork &/or tofu (why not add both!)
-
2 tbsp of extra virgin olive oil
-
1 onion, diced
-
200mL low sodium chicken stock or bone broth
-
250mL lite coconut cream
-
5 tbsp peanut butter
-
1 red capsicum, chopped
-
1 head of broccoli, chopped
-
1 zucchini, chopped
-
Brown rice or wholemeal noodles
-
Coriander
-
Lime
-
Toasted crushed peanuts

Directions
Heat 2 tbsp of extra virgin olive oil in a large pot over medium heat. Add onion & cook for 3 mins.
Add in Mingle's recipe base & protein, cooking until lightly browned. Add remaining veggies. Cook for 2 mins.
Stir in the peanut butter, lite coconut cream & low sodium stock. Cover the pot & lower the heat to simmer for 20 mins.
Serve with brown rice or wholemeal noodles. Top with crushed peanuts & a squeeze of fresh lime. Yummo!
