Ingredients

Mingle Green Curry Recipe Base
-
500g of lean & diced chicken, pork, seafood &/or tofu (why not add both!)
-
1 onion, diced
-
400mL lite coconut cream
-
200mL low sodium chicken stock or bone broth
-
Optional - I tbsp of honey or monkfruit sweetener
-
1 red capsicum, chopped
-
1 head of broccoli, chopped
-
1 bunch bok choy, chopped
-
1 eggplant, cubed
-
Brown rice or wholemeal noodles
-
Crushed peanuts
-
Fresh coriander

Directions
Heat 2 tbsp of extra virgin olive oil in a large pot over medium heat. Add onion & cook for 3 mins.
Add protein & Mingle's recipe base, cooking until lightly browned. Add remaining veggies & cook for 2 mins.
Add your lite coconut cream & low sodium stock. Cover the pot & lower the heat to simmer for 20 mins.
Serve with brown rice or wholemeal noodles, crushed peanuts & fresh coriander. Yummo!
