Ingredients

Mingle Chipotle Taco Recipe Base
-
500g of lean beef mince, chicken mince &/or lentils (why not add both!)
-
2 tbsp of extra virgin olive oil
-
1 onion, diced
-
1 tbsp tomato paste
-
100mL low sodium beef stock or bone broth
-
1 green capsicum, diced
-
1 carrot, grated
-
1 zucchini, grated
-
Brown rice or corn tortillas
-
Cheese or nutritional yeast, sprinkled on top

Salad bits
-
Guacamole
-
Greek yoghurt with lime juice & coriander mixed through

Directions
Heat 2 tbsp of extra virgin olive oil in a large pot over medium heat. Add protein & brown at a high heat for 5 mins until lightly browned.
Add onions & cook until translucent. Now add your tomato paste & your Mingle's recipe base. Cook for 4 mins.
Add in low sodium stock & remaining veggies. Simmer on a medium heat for 15 mins until water has dissolved.
Serve with corn tortillas or in a brown rice bowl with any of your favourite salad toppings. Greek yogurt with lime juice & coriander mixed through or mashed avo with Mingle's Avo & Guac spice are killer options. Yummo!
