Ingredients

Mingle Chilli Con Carne Recipe Base

500g of lean beef mince, chicken mince &/or lentils (why not add both!)

2 tbsp of extra virgin olive oil
-
1 onion, diced
-
400g tin black beans, drained
-
250mL low sodium beef stock or bone broth
-
2 tbsp tomato paste
-
400g tin tomatoes
-
1 zucchini, diced
-
1 green capsicum, diced
-
Brown rice or corn tortillas
-
Cheese or nutritional yeast, sprinkled on top

Greek yoghurt with lime juice & coriander mixed through

DIY tortilla chips (see recipe)

Directions
Heat 2 tbsp of extra virgin olive oil in a large pot over medium heat. Add onion & cook until translucent.
Add protein & cook until brown. Now stir in tomato paste, add Mingle's recipe base & cook for 1-2 mins. Add remaining veggies including black beans.
Add in low sodium stock, tinned tomatoes & simmer for 25 mins stirring occasionally. Leave covered, off the heat for 10 mins to cool down - this will make it taste better.
Serve with brown rice topped with a dollop of greek yoghurt, a squeeze of lime, sprinkle of coriander & some grated cheese.
Optional: Cut corn tortillas into triangles, toss in extra virgin olive oil and oven at 175° for 10 mins. Yummo!
