Ingredients

500g of lean & diced chicken, paneer or tofu (why not add both!)

1 onion, diced
-
1/4 pumpkin, diced
-
1 carrot, diced
-
400mL tomato passata
-
300mL lite cream or 400mL lite coconut cream
-
200mL low sodium chicken stock or bone broth
-
2 tbsp + 2 tbsp extra virgin olive oil
-
1/4 cauliflower, chopped
-
1 zucchini, diced
-
Brown rice
-
Greek yoghurt
-
Roasted crushed cashews

Directions
Heat 2 tbsp of extra virgin olive oil in a large pot over medium heat. Add onion & cook until translucent.
Add protein & Mingle's recipe base, cooking until lightly browned. Add remaining veggies & cook for additional 2 mins.
Add in tomato passata, remaining extra virgin olive oil, lite cream & low sodium stock. Cover the pot & lower the heat to simmer for 20 mins.
Serve with brown rice, crushed cashews & a dollop of greek yoghurt. Yummo!
