Ingredients

Mingle Buffalo Chicken Bake Recipe Base

500g or lean & diced chicken, cauliflower or tofu (why not add all 3!)

2 tbsp extra virgin olive oil

1 brown onion, diced
-
200g bag of spinach
-
3 spring onions, chopped
-
1 lemon, juiced
-
1 red capsicum, sliced
-
150mL of low sodium chicken stock or bone broth

200g of lite cream cheese
-
200g of greek yoghurt
-
1 tbsp tomato paste
-
150g grated cheese
-
Wholemeal pasta
-
1 zucchini, sliced
-
1 green capsicum, sliced
-
Wedge of lemon
-
Fresh parsley
-
Nutritional yeast, sprinkled on top

Directions
Preheat oven to 180°. Now heat 2 tbsp extra virgin olive oil in a pot over medium heat. Add brown onion, tomato paste & Mingle's recipe base. Cook for 3 mins. Separately, cook your wholemeal pasta for 3 mins less than the instructions.
Add protein to recipe base pot, cook until browned. Add greek yoghurt, lite cream cheese, lemon juice, low sodium stock & remaining veggies (excluding spring onion). Cook until lite cream cheese melts.
Transfer wholemeal pasta & sauce mixture to a baking tray. Top with spring onion & grated cheese, bake for 25 mins.
Serve with a wedge of lemon, fresh parsley and nutritional yeast. Yummo!
