FAJITA FRIED RICE

YOU’LL NEED:

  • 500g chicken breast stir fry strips
  • 1 tablespoon extra virgin olive oi
  • Mingle Fajita Recipe Base
  • 1 red capsicum
  • 1 green capsicum
  • 1 onion
  • 1 tablespoon crushed garlic
  • 500g microwave rice or 3 cups cooked rice
  • 100g baby spinach
  • 2/3 cup chicken stock
  • Juice of one lime
  • To serve try - mashed avocado, natural yoghurt.

FAJITA quesadillas

YOU’LL NEED:

  • ½ onion, sliced
  • ½ green bell pepper, sliced
  • 4 flour tortillas
  • 300g steak, cut into 1/4-inch thick pieces
  • 1 cup shredded cheese
