Ingredients
- 100g sweet potato noodles
- 1/2 Chilli, finely sliced
- 1 cucumber, chopped
- 150g coleslaw mix
- 1/4 cup spring onion, thinly sliced
- 1/2 red onion, finely diced
Zest Quest Chicken:
- 3 chicken thighs

3 tbsp Mingle Chicken Bake recipe base
- 1-2 tbsp olive oil
Dressing:
- 1/4 cup Greek yoghurt

1/4 cup Mingle sweet chilli sauce
- 1 tbsp sriracha or Tabasco
- 1 tbsp honey
- 2 tbsp soy sauce
- 1 lime, juiced
Directions
Coat the chicken with Mingle Chicken Bake and olive oil. Cook in the air fryer at 200 °C for 15-18 minutes. Flipping halfway.
Boil water and cook noodles according to the packet instructions. Drain and rinse noodles with cold water. Set aside.
Add all dressing ingredients to a small bowl and whisk until well combined.
In a large salad bowl, add cooled noodles, chilli, cucumber, slaw mix, spring onions, and red onion. Top with sliced chicken and dressing. Toss all together.
