½ packet Mingle Taco recipe base

1 tbsp tomato paste

2 tbsp butter

1 cup shredded cheese

2 tbsp sour cream

Directions
Preheat your oven to 200°C. Use a fork to prick the potatoes all over (this lets steam escape). Rub them generously with olive oil and salt—don't be shy here, as this makes the skin delicious.
Wrap the seasoned potatoes tightly in aluminum foil and bake for 1 hour.
While the potatoes are in their final 15 minutes of roasting, heat a drizzle of oil in a frying pan over medium-high heat. Brown the beef mince until fully cooked and crumbly.
Sprinkle the Mingle Taco recipe base over the beef. Stir in the tomato paste and a splash of water.
Remove the potatoes from the oven and carefully slice them in half. Add a knob of butter and use a knife or fork to fluff up the inside, mixing the butter into the hot potato flesh.
Layer in this order for the best melt: cheese, taco beef, cheese, a dollop of sour cream, and coriander to finish.
