Ingredients

2 corn cobs

1 tsp olive oil

1 tbsp Mingle Taco Seasoning
Sauce:
-
½ cup Greek yoghurt
-
1 tsp Mingle Taco Seasoning

Squeeze of lime juice
Directions
Carefully slice each corn cob lengthways into quarters to create rib shapes.
Toss the corn ribs with olive oil and Mingle Taco Seasoning until well coated.
Cook in the airfryer or oven at 200°C for 12–15 minutes, turning halfway, until the corn is tender and lightly charred on the edges.
In a small bowl mix Greek yoghurt, Mingle Taco Seasoning and lime juice until smooth.
Serve the corn ribs hot with the taco yoghurt sauce drizzled over or on the side for dipping.
