Ingredients
Pork Skewers:
-
600g pork scotch fillet, cut into 3cm cubes
-
1 packet Mingle Honey Garlic Rub
-
2 tbsp honey
-
2 tbsp soy sauce
-
2 tbsp apple cider vinegar
-
2 red onions, cut into wedges and separated into layers
-
2 tbsp olive oil
Creamy Apple Slaw:
-
3 cups finely shredded green cabbage
-
1 green apple, cut into thin matchsticks
-
2 spring onions, finely sliced
-
2 tbsp mayonnaise
-
2 tbsp Greek yogurt
-
1 tbsp apple cider vinegar
Directions
- In a bowl, the honey, soy sauce, apple cider vinegar and 1 tbsp of the olive oil until smooth.
Pour half of the sauce into a separate small bowl and set aside for basting.
Toss the pork through the remaining sauce, the packet of Mingle honey garlic rub and marinate for at least 15 minutes, or overnight in the fridge.
Thread the pork onto the skewers, alternating with the red onion pieces.
Heat the remaining olive oil in a large frypan over medium-high heat. Cook the skewers for 10 minutes, turning every 2-3 minutes, until the pork is cooked through.
In the last 2 minutes, add the remaining sauce to the skewers and cook until dark, glossy and sticky.
For the slaw, whisk the mayonnaise, Greek yogurt and apple cider vinegar together. Toss through the cabbage, apple and spring onion just before serving.
