Ingredients
- 2 chicken breasts (approx 600g), sliced thin
- 2 carrots, sliced thin
- 1 cup frozen peas
- 500ml chicken stock
- 400ml can coconut milk
- 2 x 80g packets ramen noodles
- 1 sachet Mingle Sri Lankan Curry Base
- Spring onion & Mingle Everything bagel seasoning to top
Directions
Preheat oven to 180°C.
- Whisk together the coconut milk, chicken stock & curry base in a large baking dish.
- Add the chicken, carrots, peas and ramen noodles.
- Transfer to the oven & bake for 25 minutes. Turning the noodles half way through.
- Remove from oven and sprinkle over bagel seasoning & sliced spring onion.
