Sri Lankan Chicken Meatball Curry

Ingredients
Chicken Meatballs:

500g chicken meatballs
-
½ cup panko breadcrumbs
-
1 egg (helps bind the mixture)
-
1 tbsp Mingle Sri Lankan Curry Recipe Base
-
Salt & Pepper to taste
Curry Base:
-
1 tbsp coconut oil (or any neutral oil)
-
1 medium onion, sliced
-
2 large tomatoes, roughly quartered
-
3 crushed garlic cloves
-
1 tsp grated ginger
-
2 tbsp Mingle Sri Lankan Curry Recipe Base
-
¾ cup chicken stock
-
½ cup of coconut milk
-
[optional] veggies (1 diced zucchini)
-
Squeeze of lime juice to finish
Optional:
- Serve with steamed rice or green beans.
Directions
Make the meatballs by combining all ingredients into a bowl, gently mixing with hands.
Roll into small balls (around 1 tbsp meat each), set aside whilst making curry base.
In a large pan on medium-high heat, toast your Mingle Sri Lankan Curry Recipe Base for 30 seconds until fragrant.
Then add your oil and onion, cook onion for 3-5 minutes until softens.
Add garlic and ginger, cook for 30-60 seconds until fragrant.
Add your tomatoes and cook until softened and slightly jammy (3-4 minutes).
Add chicken stock and coconut milk, reduce heat to a gentle simmer.
Carefully add your meatballs and cover the pan with a lid for 10 minutes (they will cook in the sauce and stay nice and juicy!).
After 10 minutes remove lid, and add veggies if using.
Leave gently simmering for another 5-10 minutes, until veggies are soft with a slight bite, meatballs are cooked through and sauce has thickened to your liking.
Taste and season, finish with a squeeze of fresh lime.
