2 flatbreads
250g Beef mince
2 tbsp Mingle Seasoning Mexican Fajita Recipe Base
1 tbsp tomato paste
½ red onion
½ green capsicum
½ red capsicum
1 cup mozzarella
Coriander

Fajita Mayo:

1 tbsp Mingle Seasoning Mexican Fajita Recipe Base
1 tbsp mayo
Splash of water

Directions

Preheat your oven to 180°C. Brown the beef mince with 1 tbsp of fajita seasoning in a pan with olive oil.
Stir in tomato paste and cook for 1 minute. Add the onion and capsicum, sautéing for 5-7 minutes until soft.
Place flatbreads on a tray. Layer with a bit of mozzarella, the beef mixture, and a final generous sprinkle of cheese.
Bake for 10-15 minutes until the cheese is bubbly and golden.
Mix the remaining fajita seasoning with the mayonnaise to create your zesty sauce.
Drizzle the fajita mayo over the baked flatbreads and top with fresh coriander before serving.
