Ingredients

1 large sweet potato

1 tsp olive oil

1 tsp Mingle Guac Seasoning
Guac:
-
½ avocado
-
1 tsp Mingle Guac Seasoning
-
Squeeze of lime juice
Toppings:
-
½ cup cherry tomatoes, chopped
-
2 tsp sour cream
-
50g halloumi, cubed
Directions
Preheat oven or airfryer to 200°C and line a baking tray with baking paper.
Slice the sweet potato in half. Place cut side down on the tray and bake for 30–45 minutes until soft.
Remove from the oven and, using the back of a glass with baking paper, gently smash them to flatten.
Drizzle with olive oil and season with Mingle Guac Seasoning. Return to the oven for 10–15 minutes until the edges become crispy. In a small bowl, mash avocado with Mingle Guac Seasoning and lime juice until creamy.
To serve, top the crispy smashed sweet potato with avocado, chopped tomatoes, sour cream and halloumi if using.
