Ingredients
- 3 hash browns, defrosted
- 3 eggs, whisked
- 1-2 tbsp Mingle Salsa and Taco Sauce
- ¼ red onion, diced
- Small handful of spinach
- Small handful of tasty mozzarella
- Olive oil
Directions
In a non-stick pan, drizzle in a little olive oil. Place in hashbrowns and press down firmly to flatten. Allow to get crispy for 3 minutes, flip, and crisp up the other side.
Pour in the whisked eggs and cook on low heat until mostly cooked through.
Spread the Mingle Salsa or Taco sauce over the eggs and then layer onion, spinach, and cheese.
Roll up and serve immediately. Top with extra parsley, salsa or taco sauce.
