Ingredients

1 small cucumber
-
1/2 cup edamame beans
-
1/2 avocado, diced
-
1–2 tbsp sesame seeds
-
2–3 tbsp Mingle Japanese Yuzu Dressing
Directions
Cut the cucumber into quarters lengthways, then widthways. Lightly smash and chop into rough bite-sized pieces.
Add cucumber to a bowl or container along with edamame beans and avocado.
Add sesame seeds, Mingle Japanese Yuzu Dressing
Toss well to combine (or shake in a sealed container for extra crunch and coating).
Serve immediately as a fresh side or light lunch with protein of choice.
