Ingredients

125g extra lean beef mince
2 mini flour tortillas
1/2 cup enchilada/taco sauce or crushed tomatoes
50g refried beans or black beans
30g Greek yoghurt
20g mozzarella
1/2 cup diced capsicum
1/2 cup corn
1/4 packet Mingle Taco seasoning
Optional: avocado and fresh lime

Directions

Preheat the oven to 180°C.
Mix beef mince with taco seasoning.
In a dish, layer 1/4 cup sauce, tortilla, refried beans, capsicum, corn, yoghurt, and beef.
Repeat layers. Top with mozzarella and bake for 15–25 minutes.
Serve with avocado and lime.
