1 tbsp olive oil

1 chicken breast fillet, halved

½ red capsicum, thinly sliced

½ cup coleslaw salad mix
-
½ edamame
-
50g pad thai rice noodles
-
2 tbsp Mingle Seasoning Japanese Yuzu Dressing

1 large jar
Directions
Cook the chicken breast in a frying pan over medium heat in olive oil for 8-10 minutes, flipping halfway through. Set aside to cool and then shred.
Cook the rice noodles according to the package instructions. Drain, rinse under cold water to stop the cooking process, and let them drain thoroughly.
In a jar layer, capsicum, coleslaw salad, edamame, rice noodles, chicken and Japanese Yuzu Dressing. Put the lid on and shake until all ingredients are combined. This is fantastic for meal prep!
