Chicken thighs, charred corn, juicy capsicum, and blistered tomatoes, all tangled up with Peri Peri magic — minimal effort, maximum payoff.
Ingredients
- 8 boneless chicken thighs
- 2 corn cobs, sliced into rounds
- 1 red capsicum, cut into strips
- 1 yellow capsicum, cut into strips
- 1 punnet (250g) cherry tomatoes
- 2 tbsp olive oil
- 1 full packet (30g) Mingle Peri Peri Rub
- 1 lemon (for squeezing at the end)
- Fresh coriander (optional, for garnish)
Directions
Preheat oven to 200°C (fan-forced).
- In a large bowl, toss chicken thighs, corn, capsicum, and cherry tomatoes with olive oil and the full packet of Mingle Peri Peri Rub.
- Spread everything evenly onto a lined baking tray.
- Bake for 25–30 minutes, turning once, until chicken is golden and cooked through.
- Squeeze fresh lemon juice over the tray straight out of the oven.
- Garnish with coriander and serve.
