Potato Chicken Buffalo Quiche

Who would’ve thought you could enjoy a crustless quiche using potatoes?!
Ingredients
Potato Crust:

1-1.2kg potatoes
-
1 tsp olive oil
-
Salt
Quiche filling:
-
6 eggs
-
1 cup of milk
-
2 tbsp Mingle Buffalo Chicken Recipe Base
-
200g cottage cheese
-
200g feta
-
¼ cup fresh dill, chopped
-
2 tbsp chives, chopped
-
Squeeze of lemon
-
¼ cup grated cheese (mozzarella or cheddar work well)
Directions
Preheat oven to 200c and place potatoes onto a baking tray, rub with olive oil and a pinch of salt and bake for 60-90 minutes until soft.
Reduce oven temperature to 180c and grease a springform cake tin.
Transfer potatoes to the cake tin, using the base of a cup to squash firmly to create the crust, drizzle with some more olive oil.
In a bowl, whisk eggs, milk, cottage cheese until smooth.
Fold through spinach, feta, dill, chives and Mingle Buffalo Chicken Recipe Base.
Pour mixture into the potato crust and sprinkle over mozzarella.
Bake for 45 minutes until set and golden.
Rest for 10 minutes, allowing to cool slightly before slicing.
