From boring to BRILLIANT salads! You’ve got to try this Peri Peri Crunch Chickpea Halloumi Salad 🧡
Ingredients
For the crispy chickpeas:

400g can chickpeas, drained
-
2 tbsp Mingle Peri Peri Recipe Base
-
1 tsp cornflour
-
Drizzle olive oil
Salad ingredients:
-
100g Halloumi, diced
-
3 handfuls of spinach, chopped
-
1 cups cucumber, finely diced
-
1/4 red onion, finely diced
-
1/4 cup pomegranate aprils
-
Small bunch mint leaves & parsley, finely chopped
For the dressing:
-
2 tablespoons olive oil
-
1 tbsp Mingle Seasoning Lemon Citrus seasoning
-
1 tsp chilli flakes
-
1 tbsp honey
Directions
Cover the chickpeas in the olive oil, Peri Peri seasoning, and cornflour. Toss until well coated, then bake in the air fryer for 15 minutes at 180°C. Allow to cook.
Fry the halloumi in a heated pan until slightly brown roughly 2-3 minutes each side.
Toss the salad ingredients together. Add the cooled chickpeas & halloumi, pour the dressing over and mix well.
