Ingredients
- 1 cooked chicken breast, shredded
- 1/4 red onion, diced
- 1 celery stalk, diced
- 2 spring onions, diced
- 75g light Greek yoghurt
- 1 tbsp light mayo

1 tbsp Mingle Peri Peri Rub or Roast
- Handful of crumbled feta
- Sliced cucumbers
Directions
In a large bowl, add shredded chicken, onion, celery, spring onions, Greek yoghurt, mayo, and Mingle Peri Peri Rub or Roast. Mix until well combined.
- Crumble in some feta and mix again.
- Transfer to a lunch container and top with additional spring onions and feta.
- Serve with sliced cucumbers or corn chips
