Ingredients

500g chicken breast 2 tablespoons olive oil

1 red capsicum, thinly sliced

1 small red onion, thinly sliced

2 tablespoons Mingle Peri Peri Seasoning

1 to 1½ cups grated cheese

Fresh coriander or parsley, to serve

1 cup tomato passata
-
4 medium soft wraps
Directions
Preheat oven to 190°C, drizzle some olive oil into baking dish.
Rub the chicken breast with 1 tablespoon olive oil and 1 tablespoon of Mingle Peri Peri Seasoning.
Add to a pan with a drizzle of olive oil on medium high heat for 5 to 6 minutes per side, or until cooked through. Remove from heat and shred using two forks.
In the same pan, add the remaining olive oil. Cook the sliced capsicum and red onion for 4 to 5 minutes until softened.
Return the shredded chicken to the pan. Add reaming Mingle Peri Peri Recipe Base and stir through tomato passata. Stir to combine and simmer for 3-5 minutes.
Spoon the chicken mixture evenly down the centre of each wrap. Roll tightly and place seam-side down in the baking dish.
Spoon a little extra sauce from the pan over the top of the wraps and sprinkle generously with grated cheese.
Bake for 15-20 minutes until the cheese is melted and golden.
Serve with a dollop of sour cream or greek yoghurt, squeeze of lemon juice.
