One Pan Beef Noodle Ramen

This One Pan Beef Noodle Ramen is be the EASIEST no fuss week night dinner! 🙌
Ingredients

2 garlic cloves, finely diced
-
250g beef mince
-
1 Mingle Chow Mein Recipe base packet
-
2 two-minute noodle packets, seasoning discarded
-
400ml water
-
1 bunch baby bok choy
-
2 cups bean sprouts
-
1 spring onion, finely sliced
-
Crispy chili oil
Sauce:
-
2 tbsp light soy sauce
-
2 tbsp mirin
Directions
Heat oil in a large, heavy pan over medium–high heat. Sauté garlic for 30 seconds, then add the minced beef. Brown for 3–4 minutes, breaking it up as you go.
Stir in the sauce, then sprinkle over Mingle Chow Mein seasoning and cook for 2–3 minutes, until slightly thickened. Push the beef to the outer edges of the pan to create a "well" in the center.
Place your noodles in the center of the pan and add the water (it’s okay if they’re only half-submerged!).
Pop the lid on for 1 minute. Remove the lid, turn the noodles with tongs, cover again, and cook for another minute until they are just pliable.
Toss in your bok choy and bean sprouts. Use tongs to combine everything—beef, noodles, and veggies.
Sauté for 1 minute until the veggies are tender-crisp and everything is coated in that glossy sauce.
Plate immediately and top with sesame seeds, chili oil crisp, and fresh spring onions.
