Ingredients

500g lean beef or lamb mince
-
Mingle Moroccan Recipe Base
-
½ small onion, finely diced
-
½ red capsicum, finely diced
-
½ tomato, deseeded and finely diced
-
Small handful fresh parsley, chopped
-
Juice of ½ lemon
-
Salt and pepper
-
2 large lavash breads or wraps
-
Olive oil spray
Yoghurt Tahini Sauce:
-
3 tbsp Greek yoghurt
-
1 tbsp tahini
-
Juice of ½ lemon
-
Pinch of salt
-
Splash of water to loosen
Directions
In a bowl combine mince meat, Mingle Moroccan Recipe Base, onion, capsicum, tomato, parsley, lemon juice, salt and pepper. Mix until evenly combined.
Spread the meat mixture in a thin, even layer across the surface of your wrap of choice.
Roll tightly into a log and slice into pinwheels about 3-4cm thick.
Thread onto skewers with the spiral facing upwards.
Lightly spray the exposed lavash edges with olive oil.
Air fry at 180°C for 10–12 minutes, or until the meat is cooked through and the edges are crispy and golden.
Yoghurt Tahini Sauce:
Mix together Greek yoghurt, tahini, lemon juice and salt.
Add a splash of water until smooth and drizzleable. Enjoy!
