Ingredients

500g Chicken breast/thigh, diced.

3 x Capsicum (1 x Red, 1 x Yellow, 1 x Green), sliced thinkly

1 x red onion, diced.

1 x Avocado
-
1 x Radish bunch, sliced

30g MINGLE Fajita seasoning

15g MINGLE guacamole seasoning

350g instant brown rice
-
100g x sour cream
-
1 x lime, juiced
-
2 x tbsp of olive oil
Directions
Preheat oven to 180ºC
Slice up capsicum and onion, spread out over a lined baking tray. Cover with 15g mingle seasoning & olive oil.
In a small bowl add diced chicken and 15g mingle Fajita seasoning and mix. Move into a smaller baking tray.
Put both baking trays into the oven and let roast for 20 minutes.
While chicken and veg are in the over make your guacamole. Mix whole avocado, lime juice and Mingle guacamole seasoning. Place in fridge until needed.
In 4 bowls separate cooked brown rice.
Divide chicken & veg into you bowls. Top with Guac, radish & sour cream!
Enjoy with a squeeze of lime and some coriander if you dare
