Ingredients

½ brown onion

1 garlic clove

100g lean beef mince

½ packet Mingle Taco recipe base

Handful of shredded lettuce

1 cup shredded cheddar cheese

4 cherry tomatoes, diced

2 tbsp sour cream

½ avocado
-
2 small tortillas, one toasted in a fry pan

1 jumbo tortilla
Directions
Sauté onion and garlic over medium-high heat. Add beef and Mingle Taco recipe base, cooking for 6–8 min until perfectly browned.
Shred your lettuce, dice tomatoes, and grate plenty of cheese.
Warm a large tortilla so it’s stretchy. Stack in the center: Taco meat, cheddar cheese, sour cream, toasted small tortilla, avocado, lettuce, tomato, and extra cheese.
Place a small tortilla on top. Fold the edges of the large tortilla inward, overlapping to seal it all in.
Place seam-side down in a pan with a drizzle of olive oil over medium heat. Toast for 2–3 min per side until golden and crispy.
Rest for 1 min, slice in half.
