Ingredients

100g sweet Potato Noodles
- 2 chicken breast, cooked and shredded
- 3 spring onion, finely sliced
- ¼ green cabbage, finely sliced
- ¼ purple cabbage, finely sliced
- 1 carrot, grated
- ¼ cup peanuts, diced
- 100g Mingle Japanese Dressing
- 1 tbsp white sesame seeds
Directions
Cook sweet potato noodles according to package directions. Rinse immediately with cool water, drain thoroughly, and place into a large salad bowl.
- Grill chicken until cooked through. Shred the chicken into bite-sized pieces and add to the bowl with the noodles.
- Add all your remaining ingredients directly into the large salad bowl with the noodles and chicken. Drizzle the Mingle Japanese Dressing all over the salad.
- Use a large spoon or tongs to vigorously mix all the ingredients in the bowl until the shredded chicken and noodles are fully coated in the dressing and everything is evenly distributed.
- Top the salad with extra spring onions and sesame seeds.
