Ingredients

2 large chicken thigh/breast fillets, diced

1 onion, diced

1 tbsp Mingle Italian Herbs Seasoning

1 tbsp cream cheese
-
250ml thickened cream
-
½ cup chicken stock

Lasagne sheets, broken in half

Handful spinach
-
1 cup mozzarella, grated
Directions
Heat a drizzle of olive oil in a pan. Toss in your chicken, diced onion, and Italian herbs. Sauté for 3-5 mins until the chicken is golden and cooked through.
Stir in the cream cheese and thickened cream. Let it bubble away on a gentle simmer until that sauce starts to look luscious and thick.
Take your lasagna sheets and break them into random shards. Tuck them into the pan, making sure every piece is fully submerged.
Cover and cook for 5-10 mins until the sheets are al dente.
Turn off the heat. Smother the top with a handful of the mozzarella, pop the lid back on, and let it sit until melted.
Top with a sprinkle of fresh parsley and serve straight from the pan!
