Ingredients

2 large capsicums, halved and deseeded

500g chicken mince
-
1 x Mingle Honey Garlic Recipe Base
-
1 brown onion, finely diced
-
250g stir-fry vegetable mix (cabbage, carrot)

1 tbsp cornflour mixed with 4 tbsp cold water to make a slurry

Olive oil spray
To serve:
-
Sesame seeds
-
Sliced spring onions
-
Mingle Sriracha or Tomato Sauce.
Directions
Lightly spray the capsicum halves with olive oil and place them in the air fryer basket.
Heat a large frying pan over medium-high heat. Add the onion and cook for a few mins until soft, then add chicken mince and cook until browned.
Sprinkle over the Mingle Honey Garlic Recipe Base and stir well to coat the chicken.
Add the stir-fry vegetable mix and cook for 2–3 minutes, until just tender but still crisp.
In a small bowl, whisk together the cornflour and water to make a slurry. Pour into the pan and cook for 1–2 minutes, stirring, until the sauce becomes glossy and coats the filling.
Spoon the filling evenly into the capsicum halves.
Air fry at 180°C for 10–12 minutes, or until the capsicums are tender and lightly charred around the edges.
Finish with sesame seeds and sliced spring onions before serving. Optional: drizzle with Mingle Sriracha Sauce.
