Ingredients

2-3 large chicken thighs

2 tbsp light soy sauce

1 tbsp oyster sauce

1 tsp brown sugar

1 packet Mingle Honey Garlic BBQ Roast or Rub Seasoning

Bok choy
-
1 cup long-grain rice
Chicken Broth:
-
1 tbsp ginger, minced
-
2 garlic cloves, diced
-
2 tbsp light soy sauce
-
2 cups chicken stock
Directions
In a bowl, whisk together the soy sauce, oyster sauce, brown sugar, and Honey Garlic seasoning. Add the chicken thighs and toss to coat thoroughly. Allow them to marinate for 15–20 minutes, or cook immediately.
Place the seasoned chicken thighs in the air fryer. Cook at 180°C for about 15 minutes, or until the chicken is golden brown and cooked through.
While the chicken is cooking, prepare your rice according to package instructions. Simultaneously, add all your broth ingredients into a saucepan. Bring the liquid to a boil, then reduce the heat and let it simmer for 5 minutes.
Just before you are ready to serve, place the bok choy directly into the simmering broth. Let it cook for 1–2 minutes until the leaves are wilted but the stems still have a slight crunch.
Build your bowls by starting with a base of cooked rice. Add the chicken thighs and bok choy, then ladle the hot broth over the top.
Optional: Finish with a sprinkle of fresh chili and sesame seeds.
