Ingredients

4 thick white fish fillets (Cod or Barramundi)

2 bok choy or choy sum, roughly chopped

2 zucchini, shaved into ribbons
-
400ml coconut milk
-
2 tbsp neutral oil
-
1 packet green curry seasoning
-
1/2 tbsp fish sauce

1 tbsp soy sauce
-
1 lime, juiced (plus extra wedges to serve)

Steamed rice, to serve

Fresh coriander, to serve

Fried shallots, to serve

Baking paper, for the parcels

Kitchen string, to tie the ends
Directions
Preheat the oven to 200°C.
In a small saucepan on medium heat, add oil and mingle green curry seasoning, fry for 30 seconds then whisk together the coconut milk, fish sauce, soy sauce and lime juice, until combined and warmed.
Cut 4 large sheets of baking paper. Fold each sheet in accordion pleats (like a xylophone) along its length, then tie each end tightly with kitchen string to form a boat shape. Gently push the middle out and down to open up a well in the centre.
Layer the chopped Asian greens and shaved zucchini into the bottom of each boat, place a fish fillet on top, then pour the curry sauce evenly over each piece of fish.
Place the boats on a baking tray and bake for 15–18 minutes, until the fish is cooked through and flakes easily.
Serve straight in the boats with fresh coriander, sesame seeds and fried shallots scattered on top and a side of steamed rice.
