Ingredients

2 large chicken thighs, diced

1 medium zucchini, cut into half moons

1 red onion, diced

2 garlic cloves, diced

1 packet Mingle Greek Style BBQ Roast or Rub Seasoning

1 tbsp olive oil
-
80g cherry tomatoes, quartered

Greek feta
-
Parsley
Homemade Tzatziki:
-
160g Greek yoghurt
-
1 small cucumber, diced
-
2 tbsp fresh dill, diced
-
½ lemon juice
-
1 tsp garlic, minced
-
1 tsp Mingle Greek Garlic Seasoning
Directions
Place the chicken, zucchini, onion, and garlic directly into the air fryer basket. Drizzle with olive oil and sprinkle generously with the Greek BBQ seasoning. Toss or shake the basket thoroughly to ensure everything is evenly coated.
Cook at 180°C for 13–15 minutes. Make sure to pull the basket out, add tomatoes and give it a good shake halfway through to ensure the chicken browns evenly and the vegetables soften.
While the chicken is cooking, combine the Greek yogurt, cucumber, dill, lemon juice, garlic, and Greek Garlic seasoning in a small bowl. Stir until well combined and creamy.
Spread a thick layer of the homemade tzatziki across the bottom of a large serving bowl or platter.
Spoon the hot chicken and roasted vegetables directly over the tzatziki. Top with a generous sprinkle of crumbled feta and fresh parsley to finish.
