Ingredients
- 1 medium zucchini

½ cup breadcrumbs

1 tbsp Mingle Salt & Vinegar Popcorn Seasoning

1 egg

Olive oil spray
-
1 tbsp Greek yoghurt for serving (optional)
Directions
- Preheat the oven to 180°C.
Use a mandolin to evenly slice the zucchini.
Combine the Mingle Salt & Vinegar Popcorn Seasoning with the breadcrumbs.
Dip each zucchini slice into the egg wash, then coat with the seasoned breadcrumbs. Place them evenly on a lined baking tray.
Spray lightly with olive oil and bake in the oven for 15–20 minutes, or until crispy, ensuring the crumbs don’t burn.
Remove from the oven and serve with Greek yoghurt, if desired.
