Ingredients
- 1 tbsp olive oil
- 250g pork mince
- 125ml Mingle Seasoning Japanese Yuzu Dressing
- 1 tbsp mayonnaise
- 1 red capsicum, finely sliced
- 1 cucumber, cut into thin strips
- ⅛ purple cabbage, finely sliced
- 4 spring onions, finely chopped
- 100g pad thai rice noodles
- 1 tsp Mingle Rice Topper Seasoning
Directions
Heat a drizzle of olive oil in a large frying pan over high heat. Add the pork mince and cook, breaking it up with a spoon, until browned and crispy. Remove from the heat and set aside.
Cook the rice noodles according to the package instructions. Drain, rinse under cold water to stop the cooking process, and let them drain thoroughly.
In a small bowl, whisk together the Japanese Yuzu Dressing and mayonnaise until smooth and fully combined.
In a large bowl, combine the capsicum, cucumber, purple cabbage, spring onions, cooked rice noodles, and crispy pork. Pour the dressing over the top, toss thoroughly to coat, and serve with a sprinkle of Rice Topper seasoning.
