Ingredients

250g rigatoni
-
8 Mozzarella String Cheese Sticks, cut to pasta size

5 chicken sausages
-
1 brown onion
-
1 garlic clove
-
2 tbsp tbsp butter
-
300ml thickened cream
-
100ml chicken stock
-
1 packet Mingle Seasoning Mac & Cheese Recipe Base

2 tbsp parmesan, grated
-
A handful of mozzarella, grated

½ cup panko crumbs
-
Parsley
Directions
Preheat oven to 190°C. Cook rigatoni for just 5-6 mins so it stays firm enough to stuff. Drain & let cool.
Sauté onion & garlic in a pan. Add your sausages, breaking them up into a fine mince with your spoon. Cook until browned, then set aside.
Melt 1 tbsp butter over medium heat. Stir in cream, chicken stock, Mac & Cheese recipe base, and parmesan. Simmer until thickened.
Mix 1 tbsp melted butter with panko crumbs in a small bowl.
Stuff each rigatoni tube with mozzarella. Spread a layer of sauce on the bottom of your baking dish. Stand the stuffed pasta upright, packing them in tight.
Spoon the sausage mince over the top. Pour the rest of the sauce over everything, letting it fill the gaps.
Top with extra shredded mozzarella, the buttery panko crumbs, and fresh parsley.
Pop in the oven for 20-25 mins until golden and bubbly. Rest for 5 mins then serve!
