250g Risoni or Orzo

500g chicken breast, diced

500ml chicken stock

100ml light cooking cream

2-3 tbsp Mingle Tuscan Chicken Seasoning

1 cup chopped Spinach

1 punnet cherry tomatoes, sliced

1 tbsp Parmesan cheese

100g Mozzarella Cheese
Directions
Preheat the oven to 180°C.
Add risoni, stock, cream, and seasoning to a large oven-safe baking dish and mix.
Add spinach, tomatoes, and chicken. Top with parmesan and mozzarella.
Bake in a preheated oven at 180°C for 45–60 minutes until cooked through.
Portion into 4–5 serves and enjoy!
